Iced Gunpowder Green Tea with Honey and Watermelon

Refreshing, chilled gunpowder tea with watermelon and a hint of honey.

Ingredients

  • 1 litre of filtered water

  • A quarter wedge of watermelon 

  • 1 ½ tbsp of loose Gunpowder Green Tea

  • 2tbsp set honey

Method

  1. Boil the water in a clean, descaled kettle and leave to cool slightly. The pour into a glass jug.  

  2. Circle pit – add the honey and stir till dissolved. Add the tea leaves and leave for 5 minutes to brew. Stir and sieve out the leaves and compost them.

  3. Cut the watermelon into triangular slices and put 2 to 3, of the smaller end slices, with no pips into a container and refrigerate for decoration. Dice the flesh of rest of the watermelon into chunks and compost the rind. Lightly crush your chunks with a fork in a bowl.

  4. Add the crushed watermelon chunks to the tea once it has fully cooled, cover and refrigerate overnight.

  5. Serve on ice, garnished with a slice of watermelon.

💡Pro Tips

  • The gunpowder tea makes this drink a red/brown colour, you can switch to Jasmin tea for a clearer drink. 

  • A great alternative to fizzy drinks for summer. 

  • Gunpowder tea or Pearl tea comes from the Camellia Sinensis plant. The Chinese word for this tea is zhu cha and is one of the oldest green tea. It is a very common and popular tea used in many tea traditions. Some scientific studies advise that this tea may have anti-viral, anti-bacterial and anti-cancer properties and is full antioxidants. In tests it showed inhibiting properties and reduced side-effects of many viruses like Herpes, Candida and Influenza.  Other possible health benefits include anti-inflammatory, anti-fungal, strengthens the immune system, increases bone density, and lowers blood sugar and cholesterol. To get the max health benefits with a pleasant flavour brew for 3-5 mins in water at around 80°C/176°F.
