Unholy Guacamole

Super simple, homemade guacamole with a vinegar and chilli kick
Ingredients
2 ripe avocados
1 spring onion including stalk (scallions)
2tbs of vinegar
Cayenne pepper to taste
Salt and pepper to taste
Method
Mosh pit – Deseed your avocados, and spoon the flesh of the fruit, into a bowl. Using a fork, mash them up. Release that tension, Sabbeth on in the background helps the process.
Run your nail along the stalk of the spring onion, (green bit) to split it open. Do this so that you can wash the onion properly and ensure no soil gets into your dish. Always use the stalks they have a lovely mild chive like taste that complements the mild onion. Then finely chop.
Circle pit – mix the chopped spring onion and the rest of the ingredients into the avocados and give it a good stir. Hey presto you're done, now hand me that taco....
Serve chilled, as a side to most Mexican style meals and Hops based beverages.
💡Pro Tips
Cover and place in the fridge and use as soon as possible.
The vinegar adds flavour and stops the avocado going brown, not a fan? Swap the vinegar for fresh lemon.
Avocados are a great source of potassium, in fact they are higher in potassium then their fruity friend, Mr Banana. They are also jammed full of health fats and with no cholesterol these little green gems are great for a health heart.
