Portobello Mushroom, Burnt Red Pepper and Creamy Zucchini Pasta

Mediterranean inspired portobello mushroom, burnt red pepper and zucchini pasta with mascarpone and toasted mustard seeds.
Ingredients
250g penne or rigatoni pasta
1 zucchini (courgette)
2 portobello mushrooms, sliced
1 red pepper
50g mascarpone cheese
4 cloves of garlic, finely sliced
1 tbsp of mustard seeds
2 tbsp olive oil
Pinch of salt, pepper, oregano, dill, thyme and turmeric
Method
Bring a pot of water to the boil and add the pasta, 1 tbsp of olive oil and a pinch of salt. Reduce the heat to a simmer and cook until the pasta is al dente. Strain the pasta and return to the pot, cover and leave to the side.
In a pan dry fry your mustard seeds. As they start to toast, they will begin to pop. Toast for 2 minutes then remove and set aside.
Use a kitchen torch to burn the skin of the red pepper then slice finely. This gives the pepper a bitter, distinct flavour that will complement the creamy sauce.
Mosh pit – In the same pan heat a tbsp of olive oil. Cut your zucchini into slices and then half-moons add them to your pan and allow to fry for a few minutes. When the seeds start to become visible add the mushrooms, garlic, red pepper, spices and the mustard seeds and fry for a further few minutes on a medium heat. Reduce the heat add a dash of boiling water stir and cover. Continue to cook until all the veg is cooked but still crunchy.
Circle pit – Stir in the mascarpone and pasta into the vegetables and cook for another minute until everything is heated through.
Serve and enjoy.
💡Pro Tips
If you are making a big batch of the sauce to freeze don’t add the pasta in step 5. Cook your pasta fresh when required.
