Salmon with Kaffir Lime Leaves and Lemon

Crispy butter fried salmon, with Kaffir lime leaves and zesty lemon

Ingredients

  • Fresh Pacific salmon steaks

  • Knob of butter

  • Lemon wedge

  • 1 dried Kaffir lime leaf

  • Salt and pepper to taste

Method

  1. Melt your knob of butter in a skillet on a low heat.

  2. Holding the salmon, sear the skin side in the butter before you lay it flat in the pan.

  3. Sprinkle a bit of salt, pepper and crumble 1/3rd of the lime leaf onto your salmon.

  4. Once one side is cooked, flip and repeat the seasoning.

  5. Watch carefully to ensure the butter does not burn. Cooking takes approximately 6 minutes or until the fish begins to flake and is no longer translucent. Always be extra careful with seafood to ensure it is fully cooked.

  6. Serve with the last of the lime sprinkled for colour and a wedge of lemon.

💡 Pro Tips

  • Go easy on the Kaffir lime leaves, they are surprisingly fragrant.

  • If possible, try to obtain a Pacific wild caught salmon as the majority of Atlantic salmon, unless stated is farmed.

  • I'm Good For: Salmon – Is full of Omega-3 health fats which make it a great “brain” food, anti-inflammatory and high in protein. It is also full of Vitamin D and B12, potassium and iron.
